01
Concept & Strategy

The thinking work. Building the idea, the brand, and the business case before anything is built. Concept development, market analysis, financial modelling, menu engineering, pricing strategy.

02
Operations & Launch

The building work. Turning a concept into a functioning restaurant that delivers consistently. Pre-opening management, SOPs, service model design, staffing framework, post-launch advisory.

03
Brand & Visual

The communication work. How the restaurant presents itself to the world. Brand identity, website, photography direction, social media, menu design, guest experience touchpoints.

01
Diagnostic Advisory
2–3 weeks · Flat fee

A structured assessment of where the business is and what it needs to change.

For operators facing a specific problem — declining covers, pricing pressure, a concept that is not landing — and who need an outside perspective grounded in real operational and financial experience. Delivers a written diagnostic report with findings, root cause analysis, and prioritised recommendations.

02
Business Plan & Concept Strategy
4–8 weeks · Flat fee

The thinking and the numbers — built together, from the same perspective.

The foundational engagement for a new concept or significant repositioning. Market and competitive analysis, concept positioning, full financial model, pricing strategy, menu engineering, beverage program direction, capacity ceiling analysis, and a phased operational roadmap — written from the operating reality of the specific concept.

03
Brand & Visual Direction
4–8 weeks · Flat fee

How the restaurant presents itself — and whether that matches what it actually is.

Naming, visual identity, and communication work that determines how a restaurant is perceived before a guest arrives. Typically paired with Tier 02 for new launches; available independently for existing restaurants whose brand has drifted from the experience they deliver.

04
Strategic Advisory Retainer
3-month minimum

An ongoing thinking partner for operators who need a rigorous outside perspective.

Monthly advisory session, ongoing availability between sessions, quarterly performance review, and input on pricing, menu, and beverage decisions as they arise. A strategic relationship that compounds in value as the advisor develops deep understanding of the specific business.

Full-Scope Launch Engagement

Tiers 01 through 03 — Diagnostic, Business Plan & Concept Strategy, and Brand & Visual Direction — can be engaged together as a single full-scope launch mandate. This is the integrated model used on our anchor omakase launch engagement. Full-scope engagements are scoped and quoted individually.
